Produced predominantly with Sangiovese grapes, and an interesting native clone called Prugnolo Gentile.
Nobile di Montepulciano wine is distinguished by its soft tannins and its classic hint of plum. It is a fine, full-bodied wine with an intense, fruity bouquet. It has a lively freshness and a warm fruitiness; its tannins are intense, but rounded by a long aging in wood. Nobile di Montepulciano wine is savoury and characterized by earthy and underbrush notes; however, it is not as mineral and austere as most other Tuscan wines.

Vino Nobile di Montepulciano is one of the oldest and most prestigious Tuscan wines, and is made with the grapes of a particular Sangiovese clone, which in Montepulciano takes the name of Prugnolo Gentile. The Italian Prugna means plum, giving its name to the varietal because of the strong scent of plum that it gives to the wine.

Like all great Tuscan red wines, it is born of the bond that has been created over the centuries between Sangiovese, the predominant grape, and the territory it grows in.

The secret of this Tuscan wine is the soil: it has alternating layers of sand and clay which, when mixed, create ideal conditions for producing structured wines, which have wonderful scents but also fine tannins. Nobile di Montepulciano is a traditional wine, certified by a consortium that controls it and gives it a quality seal.

There are not very many producers of Nobile and the original production area has not been enlarged to excess, even though it has enjoyed a fair degree of prestige since the Renaissance. Then, Montepulciano wine was exported in small quantities, often ending up being served at the tables of noble European families.

However the name of Nobile (Noble) wine seems to be quite recent. In fact, until 1930 the official name was ‘Vino rosso scelto di Montepulciano’ (‘Choice red wine from Montepulciano’. However, there are documents from the 18th century onwards that sporadically mention ‘Nobile’ wine.

The father of the Nobile wine, as we know it today, is Adamo Fanetti. He defined the wine that he produced ‘Vino Nobile’ perhaps because he was particularly proud of it or perhaps because he was following popular tradition, Certainly Mr. Fanetti was the person that consolidated the success of this Tuscan wine, by participating in fairs and wine events to promote it.

On this private Tuscan wine tour we will visit two local wineries. As always, our tours only visit organic and biodynamic wineries, and preferably family-run operations. We will also visit the charming medieval village of Montepulciano and one of the oldest wine cellars in the old town, carved into the earth in several levels.

Giacomo was very easy to deal with to set up our tour. He sent a staff member, whose name we forget, to actually take us on the tour. He was prompt, spoke English well, as was helpful and friendly. Day 1 - Saturday
You will arrive at the Villa Pandolfini Estate in the afternoon. You will settle into your accommodation and later be welcomed to dinner by the villa owners and the organizers. This dinner will offer you an easy and fun way to get acquainted with your hosts and chefs.

Day 2 - Sunday
You will enjoy a full day excursion in southern Tuscany. You will savor the delights of Tuscany. Breakfast will be served at a local pastry shop. Afterward, you will tour the marvelous ancient hilltop towns such as Bagno Vignoni and Montalcino/ Pienza. You will have lunch in a classic trattoria, followed by a visit to a cellar as you enjoy Brunello wine tasting. You will be chauffeured back for an authentic Italian pizza in the local Pizzeria.

Day 3 - Monday
This will be your first Cooking day. You will participate in a cooking class ending with a 5-course meal preparation and then sit down for lunch or dinner thereafter. You will have a free morning or afternoon to relax, as you enjoy the grounds and pool. You may opt to commute to Pisa, Florence or Siena on the local train.

Day 4 – Tuesday
You will tour the historical Florence market followed by lunch. You will then have free time, or you may opt to visit the museums. Dinner will be served at a local restaurant. During the Summer months, we prefer outdoor dining. Later on, we will head to Florence where you will meet with your guide for a historic stroll before exploring the central food markets where you will discover an actual part of Florentine history. The Florentines have enjoyed this market for centuries and it offers you a perfect chance to witness plenty of fish, meat and fresh produce all at one time. Afterward, you will have lunch at a stunning small Osteria. You will then have free time to shop as you explore the city. You may opt to tour the Uffizi museum. Later on, you will be transferred back to the villa, where a memorable dinner awaits you at a local restaurant like the 'Villa Caruso' where the famous opera singer Enrico Caruso, used to live. It is a charming property located only 5 minutes from Villa Pandolfini, where you can marvel at the gardens and the magnificent grounds. This experience will leave you feeling like you are being taken back in time. You can also visit the hills at Artimino as well as the busy generation owned Sanesi Trattoria.

Day 5 - Wednesday
This will be your second Cooking class where you finish with a 5-course meal preparation and thereafter sit down for lunch after. You will have a free afternoon to do extra optional excursions such as to Chianti and San Gimignano. You may opt to engage in truffle hunting, done from October – December in either Lucca and Pisa, Siena or Florence.

Day 6 - Thursday
This will be your third Cooking class ending with a 5-course meal preparation and afterward sit down for lunch. You will then enjoy a free evening to relax, as you enjoy the pool. Alternatively, you may take an excursion. Afterward, you will make a light dinner/platter as you enjoy a glass of wine while laughing with your new friends in the villa.

Day 7 – Friday
You will visit one of the Medici Residence's in Poggio A Caiano, Artimino an ancient hamlet which also serves as a Ceramics Factory. You may also prefer to participate in a local wine tasting instead of the ceramics or the villa. We will depart at around 9 am to have coffee and pastries then head to a neighboring ceramic factory to witness how they paint and make the magnificent Tuscan ceramics. We will then cruise through the Carmignano terrain to Poggio A Caiano where we will visit the Medici Villa, which was built for Lorenzo the Magnificent and was for a long time the architectural triumph for the late 1400's. You will have a light lunch and then head to the scenic hamlet of Artimino which faces an impressive Medici Villa, initially one of the lodges used for hunting. Afterward, we will drive back to the villa to pack as we freshen up for the 4th culinary class.
The cooking class will begin at around 4.30-5pm. Later in the night, you will enjoy your last culinary class where you will also be tasked with the cooking of the farewell dinner for the group as well as your hosts and the villa owners. All will be dining together.

Day 8 - Saturday
This will be your 'Checkout' day. We often have culinary classes on Saturday if you would prefer to engage in an extra one before you depart. You can also opt for an extension with extra activities and classes.
Extra activities available during the week/after include:
Additional nights on the estate and extra Cookery classes, Additional Wine tasting, Horseback Riding. An excursion day in Rome in the company of a guide. An excursion day in Cinque Terre, or a day tour in Venice with a guide. These additional activities will depend on the availability or if you have enough extra time.

Location and Accommodations
Located 12kms away from downtown Florence on the hill is the 150-hectare estate of vineyards, olive trees, and forest. The estate boasts a historic residence dating from the Renaissance period. There are plenty striking gardens, a swimming pool and wi-fi connectivity on-site at your disposal. Each of the accommodations has self-catering apartments in the farmhouses as well as the main villa. The villa is only a walking distance to the local shops, village and the public transport.

Along both our daily classes, you will receive a copy of our Ultimate Tuscan Recipe Book. During the “Italian Immersion” one-day class, you will receive a Good Tastes of Tuscany signature apron. There will be hands-on instructions given throughout the day and also tips and new techniques given and explained by our Italian Chefs.

1. Taste of Tuscany – Introduction to Tuscan Cuisine – 140.00 euro per person
Enjoy a one day hands-on cooking lesson with our Italian chefs introducing you to authentic Tuscan recipes.

Discover step by step how to make a satisfying full Italian menu, from the antipasto appetizer to dessert, including the art of making pasta fresca! Learn to cook pasta such as tagliatelle or pici in this fun hands-on pasta making adventure. After you prepare your pasta, the chef will help you to a prepare tempting sauce to accompany it such as fresh basil pesto, Ragout of wild mushrooms, sweet onion meat, duck ragout and an array of other sauces.

The second course is a meat or fish dish with a vegetable contorno , then the tuscan dessert!

There is also an Optional Additional Market visit with the chefs for €45 per person (minimum 2 persons to hold the market visit). Recipes vary according to the season and we utilize only the freshest ingredients available for this Tuscan experience. Do you want to expand your collection of Italian recipes? Get ready to savor some traditional and innovative Tuscan specialties. Learn how to prepare a beautiful Tuscan meal that will impress even the most experienced foodies. This class focuses on stuffed pastas such as the ravioli and on sauces. We also teach you to cook a perfect risotto beginning with making the broth and also the main course (meat) and the dessert.

This meal will be from 5 to 6 courses and it comprises of two antipasti, two first courses such as a ravioli risotto or gnocchi, a second course with one or two side dishes and a delicious dessert. Each of these menu selections is unique to the area in flavour and in execution. When you add these well tested recipes to your collection, you will be bringing home a slice of Tuscan culinary history!
